The Farmer's Market Diet
The Farmer's Market Diet is low in fat and is full of vitamins, minerals and fiber that result in disease prevention. With heaps of greens and succulent fruit, the farmers' market is a real treat to the senses. It is also the reason behind a lean body. The freshly picked vegetables and fruit can reduce the calorie intake without causing a feeling of being denied. The Farmer's Market Diet has baby vegetables as a major component. The taste of baby vegetables is invigorating. The vegetables are collected much before they grow ripe, so they are sweeter, milder and less fibrous in texture than the full-grown ones, according to American Dietetic Association. They are also convenient because it is not necessary to spend much time in tearing up baby spinach for a salad. It can be done quite quickly. Among the baby vegetables is baby Swiss chard, which has to be rinsed and cooked in a covered pan over medium-low heat. It may be seasoned with salt and pepper or hot pepper flakes.
Another baby vegetable is baby architokes. For this vegetable, the outer leaves have to be removed till one arrives at half yellow and half green vegetables. It has to be cooked with steam. Baby beets have to be roasted in a covered pan at 400 degrees F for 20 to 30 minutes. It may be added to salads or enjoyed as a side dish. As the days get warmer, homegrown vegetables stop growing. The following may be tried in such a situation as part of Farmer's Market Diet. Asparagus pasta spring rolls are good as appetizers with the lasagna noodles enclosing smoked salmon and asparagus spears. Delicate asparagus demands tender care. It may be added to baby squash, curly pasta ribbons and a simple, lemon-filled cream sauce.
The Farmer's Market Diet also has a Chinese dish, the Moo Shu vegetable and egg crepes. It can be prepared at home quickly and in combination with sweet-and-sour sauce, makes a delightful dinner. To satisfy the craving for sugar without adding excess calories, the dieter can choose peaches, nectarines, honeydew melon, strawberries and pears. Foods such as apple ciders and freshly baked pies are available in plenty. But they are full of calories and provide little nutrition. Hence, they are not recommended.
